British Afternoon tea must have Scones-英式松饼



A Traditional British quick bread- 【Scones】

This week, I am going  to make a traditional British quick bread– Sconesfor you.

Servings Prepare Time Backing Time
4-8 15min 15min

Ingredients:

Scones
Butter (softened) 80g
Plain Flour 500g
Sugar 80g
Eggs *2(scones)

*1( beaten with a pinch salt for glazing)
Baking Power 5 tsp  (1tsp=5g)
Milk 230ml (around)
To Serve: Good-quality strawberry or Raspberry jam, Clotted cream


Preparation:
  1. Preheat oven to 220C
  2. Line a Baking Tray with baking or silicone paper

Directions:
1. Put 500g Flour and 80g softened Butter into a large bowl, Rub them together to create a breadcrumb-like mixture

2. Add 80g Sugar, 2 Eggs and 25g Baking Powder into the Mixture, using a spoon to mix and turn the mixture gently, make sure they combine well.



3. Add half of the (115ml) Milk into the Mixture and keep turning gently with the spoon to combine. Then add the remaining Milk a little at a time and in order to bring the mixture to form a very soft, wet dough.

4. Sprinkle some flour to onto a clean work surface, put the dough out onto the work surface and sprinkle the some flour on top. (Don’t worry, it is normal the mixture would be wet and sticky.)

5. Using your hands to fold and turn the mixture and do this a few times until the dough be formed smooth and not too sticky.

6. Sprinkle flour onto the work surface and the top of the Dough, then use the Rolling Pin to roll up from the middle and then down from the middle. Roll until its about 2.5cm in thick.

7. Relax the Dough slightly

8. Using a Pastry Cutter, press the cutter firmly and push the dough out in different Scone shapes. Dip the edge of cutters in flour to prevent from being stick with the dough and place them onto the Baking Tray.

9. Leave them in the Tray rest for few minutes to let the baking powder work. Then use a Brush to Glaze them with the beaten egg and salt mixture.




Baking Time:

10. Bake the Scones in the middle of the oven for 15 minutes. (or until the scones are risen and color on the top getting golden- brown

11. Leave the Scones to cool



12. Serve it: Split in half and add butter, jam and clotted cream to make your own traditional Scones.




Serve it with Strawberry Jam and Clotted Cream/Butter



英式松饼-司康饼

Scones 英式司康饼
Butter (softened) 黄油 (室温,切小块) 80g
Plain Flour 普通面粉 500g
Sugar 糖 80g
Eggs 鸡蛋 *2(scones) 2个作为Scone的材料

*1( beaten with a pinch salt for glazing)

1个用来最后作为蛋液刷在Scone表面
Baking Power 泡打粉 5 tsp  (1tsp=5g)
Milk 牛奶 230ml (around)
To Serve: Good-quality strawberry or Raspberry jam, clotted cream 司康饼建议配上好的果酱,奶油,黄油一起享用

Directions:

准备工作:

烤箱预热到220度

在一烤盘上刷一点黄油(防粘),或在烤盘上铺上一层锡纸

制作过程:
  1. 把所有的干的材料:500克面粉,80克糖,80g切成小块的室温黄油,和25个泡打粉一起混合加入一个大碗中,搅拌均匀。
  2. 把湿材料:2个鸡蛋和230毫升的牛奶混合。 先将一半液体倒入1中,用勺子搅拌,在慢慢将剩下的液体倒入,直至形成湿湿的,粘稠的面团
  3. 撒一些面粉在干净的台面上,把把面团拿出来, 再其表面再撒上些面粉
  4. 用手将面粉折叠,抛起,连续几次,过程中继续撒些面粉,使得面粉不要太黏,(但不要过多,以防面粉干裂),最后使得面粉表面光滑
  5. 在面团表面撒上些面粉,用擀面杖从中间开始上下来回擀,直至面团为2.5厘米厚。
  6. 让面团呼吸下
  7. 用一些模具把面团压成不同形状,注意在模具的边缘上撒上些写面粉,以防按压过程中面团粘住。把刻好的形状的小面团放到烤盘上
  8. 让烤盘上的面团醒几分钟,使得炮打粉可以呼吸。之后用刷子将蛋液(一个鸡蛋+一撮盐)刷在每个scone面团的表面。

烘焙时间:
  1. 把烤盘放进预热烤箱中层,烘烤15分钟 (或,当看到面团发起且表面呈金棕色的时候即可)
  2. 拿出烤箱,冷却一小会儿
  3. 在每个Scone司康饼中间涂上,果酱,奶油或黄油,一个传统英式下午茶必不可少的司康饼就完成了!

  7. 哈哈~谢谢Serena~scone还是苏格兰特有的嘞~我觉得本来长得很普通的scone一加草莓酱奶油整个感觉就老诱人了~我难办吃jam和cream的,不过觉得配scone吃真的蛮好吃的!!!~
